Mix the flour, rice flour, together and add it to the butter mixture.
Combine to form a dough and let it chill for 30 minutes.
Roll out the shortbread and cut with a cookie cutter. Prick them with a fork and bake in a preheated oven at 160 degrees for 5-8 minutes, until they get a light golden color.
For the layering - Mix whipped cream and cream cheese.
